How many of you are tired of cooking? Tired of washing dishes? ππ½ββοΈππ½ββοΈI have made all the recipes I have in my arsenal ten fold. On most days, I opt for quick meals that also have less dishes to wash after. I thought I’d share a few here today, since we are on an extended stay-at-home order.
Air Fryer Chicken Wings and Fries
Items Needed: 1 pack of chicken wings and 1 bag of crinkle cut fries. Seasonings. Air Fryer.
Nothing is complete without seasoning, and it’s definitely a personal preference depending on what your taste is. I add a little bit of this and that, currently obsessed with small business Dash of Dacy seasonings at the moment. After thoroughly cleaning your meat, season well, then add to your fryer. You will end up with beautiful, crispy wings without the extra fat. Then, add your fries to the fryer, and your meal is complete. Pasta & Shrimp in Vodka Sauce
This is just like making a traditional pasta and marinara sauce dish. Choose your pasta, I used spaghetti, and choose your meat/seafood of choice. The only difference here is that I substituted traditional pasta sauce with vodka sauce to avoid making the same meal over and over. We need to spice it up! If you know how to make vodka sauce from scratch, clap for yourself. That is not my ministry. Remember, we are aiming for quick and easy today. I get this vodka sauce from my favorite budget-friendly supermarket, Aldi. Tip: Add a bit of any garlic or Italian seasoning to your pasta water and to your sauce. *Chef’s kiss!* Serve with garlic bread, enjoy!
Tacos, Literally Any Kind
A couple of weeks ago, it was Taco Tuesday on Cinco de Mayo. All Mexican food lovers were in heaven, myself included. Tacos take little to no effort because you can get all the toppings pre-packaged. The only thing that needs to be cooked is your meat/seafood of choice. If your kids are picky like mine then you can get even lazier, just make ground taco meat and let them eat it with nachos. This is what my boys love to eat instead of tacos!
Chickpeas (Chana Masala)
Shout out once again to my friends over at Aldi for this Tikka Masala sauce. Indian food has been a newfound lover of mine since becoming vegetarian, and chana masala with naan bread is a favorite. This meal is usually for myself, my kids are not big bean lovers. They pick them out of rice and beans and everything else. One can of chickpeas and half a bottle of the tikka sauce, gives me food for a couple of days. When I am eating carbs, I pair this over white rice or with naan bread. When I am carb-conscious I eat it with greens on the side. I jazz this up by sautΓ©ing onions and red bell pepper in a little grapeseed oil before adding the chickpeas and sauce.
