I know the weekend is the perfect time to have a wonderful brunch. With my weekend work schedule, I seldom get to enjoy an unlimited mimosa fete. As much as I love dining out socially, I also love to host things at home for family and friends. Today we are hosting a family brunch and I am going to share the recipe for my delicious skillet potatoes, and what else I made for the fam.
What you will need: Potatoes (5-6 large ones)
-Two Bell Peppers (whatever you prefer. Today I used red and yellow)
-One large onion (chopped up)
-Olive oil
-Tomato Sauce (a can or even pasta sauce works when my pantry is empty)
-Seasoning (I use seasoned salt, black pepper, garlic powder, one pack of sazon, cayenne pepper, parsley flakes, and whatever else you desire.)
-A skillet with a cover 1) Wash and chop the potatoes into small cubes 2) Chop your onion and bell peppers 3) Heat your skillet and add enough oil to cover the bottom 4) sauté the onion and peppers until the onions are translucent 5) add the potatoes 6) add your seasoning and stir, making sure all potatoes are coated and seasoned. Let sit for a few minutes constantly turning. 7) add tomato sauce and stir (depending on how thick you want your sauce, you may need to add water) 8) cover and let cook until potatoes reach your desired softness. 9) taste for salt and serve! Super easy right?! This can be a side for dinner or a great home fry substitute for brunch which is what I made it for today. I came up with this recipe when I first cut meat out of my diet and I was tired of eating salads all the time. If you have any other great potato recipes share them below! We also had the usual breakfast suspects on hand: bacon, sausages, and scrambled eggs with cheese. I also made some strip steak to go alongside the waffles I will tell you about in a second. Steak was chosen because everyone is tired of chicken at the moment, and they wanted something new. First things first, we clean all our meat before cooking with vinegar and lime. So please make sure you are cleaning all of your meat thoroughly before preparing. I also seasoned and marinated this steak overnight. Season to your taste. I used seasoned salt, cumin, cayenne, garlic, black pepper, sazon, paprika and chili powder. Just like the potatoes, I used olive oil and an onion to get started. Another skillet with a cover will be needed here as well. After the onion is soft, add the steak and stir. Let it “brown” for a few minutes. Essentially what this means is let it softly fry and cook in its own juices and the oil until all the pink is gone. If you are into medium rare and anything like that, I can’t advise you. We are Belizean, everything will be WELL DONE. Once the steak is browned on all sides, add some water from the bowl you marinated the meat in, and cover to cook until tender. Last but not least, brunch wouldn’t be complete without waffles or pancakes. We opted for Red Velvet Waffles. Now if you have the baking gene from the gawds, feel free to go ahead make these from scratch. But child we are using a box of cake mix to make our lives easier and get these kids fed and out of our hair. I saw this recipe on Delish, and knew we had to try it. It was a major hit and they came out sooooo good! My kids can be the pickiest kids known to man, unfortunately, I had to go back in and make regular degular waffles for them with sprinkles. I use plain waffle mix and add cinnamon to the batter. Don’t add the sprinkles until the batter is on the waffle iron. Cooking is a labor of love for me. It makes me happy seeing my loved ones enjoy something that I took the time to prepare. This would be a great menu for a Friendsgiving after the holidays, a great day after Christmas breakfast, or a “I just felt like doing my thing in the kitchen” menu.
